Last fortnight we launched a brand-new version of Intro to Low & Slow BBQ class at Hot Things BBQ School - and it couldn’t have felt more right. Led by award-winning Pitmaster Stephen Adams, the session had all the things we care about most: great food, good people, and all sharing the same love for barbecuing

It was one of those afternoons where everyone was having such a good time - tasting, chatting & laughing - Because here at Hot Things BBQ School, we don’t do this for the hype...

We do it for the love of barbecue… and for the experience we can give to fellow barbecue enthusiasts .

What We Cooked, Learned & Loved

Stephen took the group through the foundations that make Low & Slow barbecue such a rewarding craft.

Intro to Low & SlowNo flashy tricks, no complicated gadgets — just real, honest techniques that anyone can take home and use straight away.

Skills Covered

  • Fire management & airflow
  • Smoke selection & flavour control
  • Seasoning fundamentals that actually matter
  • Timing, temperature, and understanding the “rhythm” of BBQ
  • Choosing & prepping the right cuts for Low & Slow success

From there, everyone gathered around each type of cooker to see (and taste) how they behave differently:

  • Pellet smokers – clean, consistent smoke
  • Charcoal kettles – flavourful, hands-on cooking
  • Ceramic smokers – stable, long-burning, and reliable

We cooked steak, beef ribs, brisket bacon, poppers & more — with individual tastings throughout so everyone
could compare textures, techniques, and smoke profiles as they went throughout the day,
